Cynara cardunculus
Rewarding perennial vegetable with large buds and decorative, huge flowers.
The thistle-like plant was already known as a cultivated plant by the Egyptians and was considered a delicacy by the Romans. The young flowers can be freshly prepared or pickled. If the plants are protected a little in winter, they will thank you with some large flowers/plants in the following season. If you let the buds blossom, they develop into a real insect magnet and an eye-catching flower highlight.
